Gelatin production from trim wastes of buffalo leather by different methods and determination rheological properties of Buffalo Gelatin

Abstract

Industrial wastes are one of the most important problems in leather industry in the world and in our country. By evaluating these wastes, it is very important to solve the environmental problems as well as to contribute to economy by producing high value added products. Leather solid wastes are of economical value due to their proteinaceous properties, fibrous character and high natural fat content, and are also suitable for gelatin production. Companies which have the capacity to produce 6 thousand tons of gelatin in need of Turkey have reported that there are insufficient quantities of raw materials for gelatin production. While more heavy leather wastes are used in the production of gelatin, due to the lack of production of buffalo, buffalo skin wastes are mixed with others. In this study, it was aimed to determine the best extraction method for the production of gelatin from buffalo leather wastes and buffalo gelatin was obtained from the buffalo skin trim wastes by 4 different extraction methods. Among these methods, the highest yield (Method 3) was determined as 13.02 g/100 g. After adding pure water (1: 5 w/v) in this method, the leather:water mixture is heated at 50°C, 60°C, 70°C and at 80°C extraction was carried out for 3 hours. The rheological properties of the produced gelatin were determined by a rheometer (TA-DHR-2, USA) and the gelatin produced by Method 3 showed the best rheological properties, storage modulus (G’) as 7739,87 Pa and the highest storage modulus found as 8008,2 Pa in angular frequency sweep tests. © 2018 Namik Kemal University - Agricultural Faculty.
