Özet
Kuruyemişçilik, gıda sanayii alt sektörleri arasından sebze ve meyve işleme sanayii içinde yer alır. Kuruyemiş sektörü, tarım sektöründen sağladığı; fındık, fıstık, ceviz, badem, ay çiçeği, nohut gibi ürünleri işlenmiş ya da yarı işlenmiş olarak piyasaya sunmaktadır.Bu araştırmanın amacı, Tekirdağ ilinde hane halklarının kuruyemiş tüketim davranışlarının, ailelerin sosyo-ekonomik özelliklerinin ve kuruyemiş satın alım tercihlerinin analiz edilmesidir. Tekirdağ ili kentsel alanda yaşayan 167 tüketici ile ve esas satış alanı kuruyemiş satışı olan 10 perakendeci ile yüz yüze anket çalışması yapılarak orjinal veriler elde edilmiştir. Araştırma sürecinde sağlanan veriler ile Türkiye'de kuruyemiş sektörünün Swot analizi de yapılmıştır. Böylece sektörün güncel durumu ortaya konularak; sektörün güçlü ve zayıf yönlerine, fırsatlara ve tehdit unsurlarına dikkat çekilmiştir.Araştırma bulgularına göre, gün içinde atıştırmalık olarak kuruyemişleri tercih edenler (%33,53) birinci sırada bulunmuştur. Perakendecilerin kış aylarında daha fazla kuruyemiş satışı gerçekleştirdiği tespit edilmiştir. Türkiye'de kuruyemiş sektörü, özellikle yurt dışından artan taleplere bağlı olarak büyük bir gelişme potansiyeline sahiptir.
Dried nuts sector takes place in the fruit and vagatable process industry, which is a sub-devision of food industry. Dried nuts sector; release the products which are supplied from agriculture sector such as hazelnuts, pistachios, walnuts, almonds, sunflower seed, chickpea that have been processed or semi processed to the market.The goal of this research is to analyze, the consumption behaviour, socio- economic property and the choices of purchase different dried nuts kinds of the households that live in the district of Tekirdağ. The research has done with 167 consumers and 10 retailer whose selling space is dried nuts. Original data was collected by face-to-face surveys. The Swot analysis of the dried nuts sector in Turkey was also made with the data obtained during the research process. Therefore, the current state of the dried nuts sector was suggested and the strengths, weaknesses, opportunities and threats of the sector were highlighted.According to research results, dried nuts are consumed as snacks during the day over by consumers (%33,53). Retailers sale more dried nuts in the winter season have been identified. In Turkey, the dried nuts sector has great potential for development depending particularly on the increasing demands from abroad.
