| dc.description.abstract | Bu arastırmada, stanbul linde baharat paketleyen ve son tüketiciye ulastıran büyük ölçekli 5 isletmeden bir yıl boyunca her ay alınan kırmızıbiber örnekleri Aflatoksin B1, toplam Aflatoksin, Sudan 1 ve Sudan 4 boyaları ve bazı patojenler yönünden incelenmistir. Toplam 60 numunede HPLC metodu ile yapılan analiz sonucunda 14 tanesinin (% 26,7) Aflatoksin B1, 10 tanesinin (% 16,7) toplam Aflatoksin yönünden yasal limitler üzerinde oldugu belirlenmistir Arastırılan toplam örneklerin 5 tanesininde (% 8,3) Sudan 1 ve 4 tanesinde ise (% 6,7) Sudan 4 boyası tespit edilmistir. ncelenen patojen mikroorganizmalardan Salmonella spp., Bacillus cereus ve S. aureus hiçbir örnekte saptanmamıstır. | |
| dc.description.abstract | In this study, totally sixty red pepper samples, derived from five big spice packaging companies for monthly during one year in Istanbul province, were analyzed concerning Aflatoxin B1, total Aflatoxin, Sudan 1, Sudan 4 and some pathogens. Aflatoxin B1 and total Aflatoxin, examined by HPLC method, were found higher from the legal limits in 14 (26.7 %) and 10 samples (16.7 %) from 60 samples, respectively. Sudan 1 and Sudan 4 dyes were detected in five (8.3 %) and four (6.7 %) samples examined from sixty samples, respectively. There was no found any Salmonella spp., Bacillus cereus and S. aureus in all samples. | |
