Tekirdağ'da satışa sunulan ıhlamur (Tilia spp.) ve kuşburnu (Rosa canina) örneklerinin aflatoksinler açısından incelenmesi

Özet
Bu çalışmada, Tekirdağ'daki market, aktar ve semt pazarlarında satışa sunulan 15 adet ıhlamur ve 15 adet kuşburnu örneğinde aflatoksin B1 (AFB1), aflatoksin B2 (AFB2), aflatoksin G1 (AFG1) ve aflatoksin G2 (AFG2) varlığı incelenmiştir. Aflatoksin analizleri HPLC yöntemi ile gerçekleştirilmiştir. Nem tayini yapılan, su aktivitesi belirlenen örneklerde toplam mezofilik aerobik bakteri (TMAB) ve maya küf sayımı yapılmıştır. Aflatoksin analizi sonucu, bir adet ıhlamur örneğinde 0,158 µg/kg AFG1 ve 0,168 µg/kg AFG2, bir diğer ıhlamur örneğinde ise 0,162 µg/kg AFG2 tespit edilmiş olup, örneklerin aflatoksin miktarlarının yasal limitlerin altında olduğu belirlenmiştir. Diğer ıhlamur ve kuşburnu örneklerinde ise, düzeyi tayin limitinin (AFB1, AFB2, AFG1 ve AFG2 için sırasıyla 0,155; 0,168; 0,156; 0,162 µg/kg) altında olmakla birlikte incelenen aflatoksinlerden en az biri tespit edilmiştir. Ihlamur ve kuşburnu örneklerinin ortalama nem miktarı sırasıyla %10,97 ve %14,58 olarak bulunmuştur. Örneklerin ortalama su aktivitesi değerlerinin ıhlamur için 0,58, kuşburnu için 0,62 olduğu belirlenmiştir. Örneklerdeki toplam mezofilik aerobik bakteri düzeyi <1,0x103-4,3x106 kob/g, maya küf düzeyi ise <1,0x103-3,6x105 kob/g arasında değişiklik göstermiştir.
In this research, aflatoxin B1 (AFB1), aflatoxin B2 (AFB2), aflatoxin G1 (AFG1) and aflatoxin G2 (AFG1) contents of 15 linden and 15 rosehip samples which were provided from supermarkets, sellers of medicinal herbs and bazaar in Tekirdağ, were investigated. HPLC method was used for aflatoxin analysis. Samples were assayed for moisture, water activity, total mesophilic aerobic bacteria and total yeast-moulds. 0.158 µg/kg AFG1 and 0.168 µg/kg AFG2 were determined in one of linden samples and 0.162 µg/kg AFG2 was determined in another linden samples. However aflatoxin levels of these samples were not higher than the maximum permissible levels. The rest of the linden and rosehip samples were determined to be contaminated with at least one of the four aflatoxins with the levels below the limit of quantification (0.155; 0.168; 0.156; 0.162 µg/kg for AFB1, AFB2, AFG1, AFG2, respectively). The mean moisture content of linden and rosehip samples were found to be 10.97% and 14.58%, respectively. The mean water activity values were determined as 0.58 and 0.62 for linden and rosehip samples, respectively. Total mesophilic aerobic bacteria counts of the samples ranged between <1.0x103-4.3x106 cfu/g and total yeast-mould counts of the samples ranged between <1.0x103-3.6x105 cfu/g.
