Özet
Bu çalışmada, İstanbul ve Tekirdağ piyasasında satışa sunulan ulusal ve yerel firmalara ait süt ürünlerinden sade yoğurt ve ayranlarda, Türk Gıda Kodeksi Fermente Sütler Tebliğine göre kullanımına izin verilmeyen stabilizatör maddelerden jelatin ve nişasta varlığı araştırılmıştır. Bu amaçla İstanbul ve Tekirdağ illerinden temin edilen ulusal ve yerel firmalara ait 186 sade yoğurt ve 60 ayran olmak üzere toplamda 246 adet ürün üzerinde jelatin ve nişasta varlığı aranmıştır. Araştırma sonucunda yerel ve ulusal firmaların ayran örneklerinin hiçbirinde jelatin ve nişastaya rastlanmazken, 21’i yerel ve 3’ü ulusal olmak toplam 24 yoğurt numunesinde jelatin, 10 adet yerel yoğurt örneğinde de nişasta tespit edilmiştir.
In this project, The presence of gelatin and starch, stabilizer substances which are not allowed to use were investigated according to Turkish Food Codex Fermented Milk Notification in pure yogurt and ayran which belongs to national and local firms milk product and offered to sale in market of İstanbul and Tekirdağ. For this purpose, the presence of gelatin and starch is searched in a total of 246 to 186 pure yogurt and 60 ayran, which is obtained from İstanbul and Tekirdağ and belongs to national and local firms. As a result of the research, in none of the local and national firms ayran gelatin and starch were found, gelatin in a total of 24 to 21 local and 3 national sample of yogurt and starch in 10 local sample of yogurt were determined.
