Bir çikolata üretim tesisinde kalite yönetim sisteminin kurulması

Abstract

Kalite sistemleri, kurulduğu her isletmeye müsteri memnuniyeti, maliyet ve zaman kaybının azalması, planlı çalısma, çalısanların motivasyonunda artıs gibi çesitli faydalar sağlamaktadır. Kalite sistemlerinin bir çalısma prensibi olarak isletmelerde sonradan benimsenmesi ise çesitli zorluklara sebep olabilir. Ancak isletmeyi kalite sistemleri üzerine kurmak, karsılasılabilecek dirençleri minimuma indirmeye ve sonrasında sistemin etkin kullanımına olanak sağlar. Ülkemizde sağlıksız gıda üretimi, kalite sistemlerinin isletme kurulumu öncesinde planlanarak uygulanması ile azaltılabilir. Bu çalısmada kalite sistemlerinin “yön belirleyici” tayin edildiği bir çikolata üretim tesisinin piyasa arastırmasından fabrika kurulumuna geçen süreci incelenecektir. Öncelikle kalite sistemlerinin kurulus amaçları ve hedefleri açıklanacak, ardından bu çerçevede bir çikolata üretim tesisinin kurulumu incelenecektir. Sektör ihtiyaçlarının tespiti, bina altyapısının hazırlanması, depo kurulumu, kalite kontrol sistemleri için doküman hazırlanması, personel eğitimi gibi baslıklar altında konu detaylandırılacaktır.

Adopting quality systems provide several benefits to each and every business enterprise. It reduces cost and time loss increases employee’s motivation and creates customer satisfaction. If one does not adopt quality systems primarily as a work principle, it can cause various difficulties. On the other hand to establish an enterprise upon quality systems enables the effective use of the system by minimizing resistance encountered along the way. The production of unhealthy food in our country can be reduced with the help of a pre-planned quality system. In this study quality systems stated as a distinctive figure will be examined from the process of the market analysis done by the chocolate manufacturing facility until the establishment of the factory. First, the targets and the goals of the quality system’s organizations will be clarified and then the establishment of a chocolate manufacturing facility will be analyzed within the framework. The identification of the needs of the market will be specified under the topics of the preparation of building infrastructure and storage, filing documents for the quality control systems and the training of the employees.
