Et ürünlerinde Listeria monocytogenes varlığının aranması

Abstract

Bu çalışma; İstanbul ilinde farklı yerlerde satılan farklı markalara ait sucuk, salam ve sosis örnekleri kullanılarak halk sağlığı açısından önemli bir gıda patojeni olan Listeria monocytogenes’in, tüketimi oldukça yüksek bu et ürünlerinde varlığını tespit etmek amacıyla planlanmıştır. Bu amaçla 10 adet sucuk, 10 adet sosis, 10 adet salam örneği olmak üzere toplamda 30 adet numune PCR (Polimeraz zincir reaksiyonu) yöntemiyle analiz edilmiştir. Analiz neticesinde alınan sonuçlarda; 10 adet sucuk numunesinin hiçbirisinde (% 0), 10 adet sosis numunesinin hiçbirisinde (% 0), 10 adet salam numunesinin hiçbirisinde (% 0) Listeria monocytogenes varlığına rastlanılmadı. Elde edilen bulgular neticesinde İstanbul ilinde farklı yerde, farklı zamanlarda ve farklı markalarda satılan bu et ürünlerinin hiçbirisinde Listeria monocytogenes’e rastlanılmaması üretici firmaların olması gereken kalitede olmayan ürünlerde bile hijyene verdiği önemi göstermektedir.

This thesis was planned to declare the existence of the most important food patogen for human health Listeria monocytogene by analyzing different marked sucuk, sausages and salamies samples which are sold in different parts of Istanbul. With this aim totaly 30 different meat products which are 10 sucuk samples, 10 sausages samples and 10 salami samples were analyzed by using PCR metod. According to the results of analyzes, Listeria monocytogenes were founded in none of 10 sucuk samples (% 0), 10 sausages samples (% 0) and 10 salamies samples (% 0). In meat products which are sold in different parts of Istanbul at the different times with different marks prove us that the producer companies are paying attention to the hygen in even the unsufficient qualified products.
