Süt ve süt ürünleri endüstrisinin sorunları ve çözümlerinin analizi: Tekirdağ örneği

Abstract

Tekirdağ ili özellikle büyükbaş hayvan varlığı bakımından ayrıcalıklı bir yere sahiptir. Özellikle süt hayvancılığı açısından bakıldığında kültür+melez büyükbaş hayvan varlığı oranı yaklaşık olarak %100’e yakın bir düzeye ulaşmıştır. Ayrıca Tekirdağ ilinde ilgili kuruluşlar tarafından hayvan giriş ve çıkışları ile kontroller tam olarak sağlandığı için bölge hayvan hastalıklarından ari, korunmalı bir bölgedir. Süt sektöründe faaliyet gösteren küçük ve orta ölçekte işletmeler faaliyet göstermektedir. Bu işletmeler daha çok Malkara ilçesinde yoğunlaşmaktadır. Özellikle sütün temel besin kaynağı olduğu düşünülürse, çiğ sütün kalitesi süt ve süt ürünlerinin kalitesini doğrudan etkilemektedir. Toplumun kaliteli süt ve süt ürünleri tüketmesi toplum beslenmesi açısından oldukça önemlidir. Tekirdağ’da elde edilen süt ve süt ürünlerinin kalitesi oldukça yüksektir. Süt sektöründe işletmelerin kuruluş düzeni ve yeri de çok önemlidir. Ayrıca sütün taşınmasından, fabrikada işlenmesine kadar hijyen kurallarına uygun teknoloji ve sistemlerin kullanılması gerekmektedir. Yoğurt, ayran, tereyağı, krema, peynir, kaşar, süt tozu gibi birçok besin kaynağının üretiminde kullanılan çiğ sütün kalitesinin korunması oldukça önemlidir. Sektörde soğuk zincir uygulamaları süt ürünleri kalitesini artırmada önemli rol oynamaktadır. Tekirdağ ilinde beyaz peynir üreten 7 süt işletmesinde de teknoloji kullanımı gelişmiş ve süt ürünleri üretiminde belli bir kaliteye ulaşılmıştır.

It is important to maintain the quality of raw milk used in the production of many food sources such as yogurt, buttermilk, butter, cream, cheese, cheddar, milk powder. Cold chain applications in the sector play an important role in improving the quality of dairy products. In Tekirdağ province, all seven milk production companies that produces white cheese has adopted advanced technology in their production and reached a certain quality in the production of dairy products. In addition, since the controls in the province of Tekirdağ are fully ensured by the relevant organizations, the region is a region free of animal diseases and is a protected area where animals are not allowed to enter and exit.
