Tekirdağ ilinde faaliyet gösteren un fabrikalarının genel yapısının incelenmesi

Abstract

Trakya bölgesi, Türkiye buğday üretiminin %9’unu üretmektedir. Buna rağmen buğday işleme, un ve yem sanayi konusunda oldukça gelişmiş bir bölgedir.Türkiye’deki toplam buğday üretimi 21.500.000 ton iken, Trakya Bölgesi’nde 1.940.565 ton üretim gerçekleştirilmektedir. Tekirdağ ise 882.674 ton üretim ve ülkedeki % 4,11 payı ile Türkiye’deki buğday üretiminde ilk 5 il arasında yer almaktadır. Bu yönüyle ülkenin diğer bölgelerindeki teknolojik gelişmelere de katkı sağlamaktadır. Trakya bölgesinde faaliyet gösteren 37 un fabrikasının 21 adedi Tekirdağ ilinde faaliyet göstermektedir.Bu bağlamda Tekirdağ ili un üretimi açısından Trakya bölgesinde önemli bir konuma sahiptir. Çalışmada faaliyette bulunan tüm un fabrikaları ile yüz yüze anket çalışması yapılmıştır.Bu çalışma ile Tekirdağ ilinde un sanayinin mevcut durumu ortaya konularak karşılaştıkları sorunların analiz edilmesi amaçlanmıştır. Un sanayi teknolojik yenilikleri takip etme konusunda istekli olmasına rağmen işletme sermayesi ve yatırım sermayesi konusunda çeşitli sorunlarla karşılaşmaktadır.Un fabrikalarının ortalama kurulu kapasitesi 103 bin ton dur. Kullanılan kapasite incelendiğinde ise ortalama kapasitenin 43 bin ton olduğu hesaplanmıştır. Buna göre kurulu kapasite ile kullanılan kapasite arasında önemli bir fark bulunmuştur. İşletmelerin üretim tipi incelendiğinde %78 gibi yüksek bir oranda iç piyasaya yönelik üretim yapıldığı görülmektedir. Bununla birlikte işletmelerin finansman kaynakları incelendiğinde %90 öz kaynaklarla finans edildiği görülmektedir.Bununla birlikte un sanayicilerinin izlediği üretim ve pazar stratejilerinin ve sektörde karşılaşılan sorunların nasıl algılandığını incelemek üzere üreticiler ile yüzyüze görüşmeler yapılmış çok boyutlu ölçekleme analizi yapılmıştır

Thrace region of Turkey produces 9% of wheat production. However, wheat processing is a highly developed region in the flour and feed industry. a total of 21.5 million tonnes, while wheat production in Turkey is carried 1,940,565 tons of production in the Thrace region. Tekirdag with 4.11% share in the country and 882 674 tons of wheat production in Turkey is among the top 5 provinces. In this respect, it also contributes to technological developments in other regions of the country. Of the 37 flour mills operating in the Thrace region, 21 are operating in Tekirdağ. A face-to-face survey was conducted with all flour mills operating in the study.Th eaim of this study is to analyze the current situation of flour industry in Tekirdağ. Although flour industry is willing to follow technological innovations, it faces various problems in working capital and investment capital.The average installed capacity of the flour mills is 103 thousand tons. When the capacity used is examined, the average capacity is calculated as 43 thousand tons. Accordingly, a significant difference was found between the installed capacity and the capacityused. When the production type of the enterprises is examined, it is seen that 78% of the production is made for the domestic market. On the other hand, 90% of the financing sources of the enterprises are financed by own resources.In addition, face-to-facemulti-dimensionalscaling analysis was conducted with producers to examine how production and market strategies followed by flour industrialists and the problems encountered in the sector were perceived.
