İstanbul ilinde satışa sunulan domates salçalarında sorbik asit ve benzoik asit varlığı

Abstract

Bu araştırmada İstanbul ilinde bulunan marketlerden ve halk pazarlarından satın alınan 30 adet domates salçası örneği, sorbik asit ve benzoik asit içeriği bakımından HPLC yardımıyla analiz edilmiş ve elde edilen sonuçlar Türk Gıda Kodeksindeki, ‘Gıda Katkı Maddeleri Yönetmeliği’nde öngörülen maksimum değerlerle karşılaştırılmıştır. Sorbik asit varlığına rastlanan 8 adet domates salçası örneğinde sorbik asit değeri 667,66 mg/L - 4,8 mg/L arasında bulunurken; benzoik asit varlığına rastlanan 10 adet domates salçası örneğinde benzoik asit değeri 1059,98 mg/L-0,4 mg/L arasında bulunmuştur. Sorbik asit tespit edilen domates salçası örneklerinden beş adet salça örneğinin plastik ambalajda üretiminden dolayı sorbik asit değerinin mevzautta yer alan limitler arasında olduğu, 3 adet salça örneğinin teneke ambalajda üretiminden dolayı sorbik asit değerinin mevzautta yer alan limitler içerisinde olmadığı tespit edilmiştir. Mevzuat gereği domates salçasında izin verilmeyen benzoik asit varlığı bulunan on adet domates salçası örneğinin mevzuata uygun olarak üretilmediği tespit edilmiştir. Analiz yapılan örnekler arasında 20 adet domates salçası örneğinde benzoik asit ve sorbik asit varlığına rastlanmayarak Türk Gıda Kodeksi Gıda Katkı Maddeleri yönetmeliğine uygun olarak üretildiği tespit edilmiştir.

In this research, thirty tomato paste samples bought from markets and public markets in Istanbul were analyzed in terms of sorbic acid and benzoic acid contents by means of HPLC and the results were compared with the maximum values anticipated in the “Food Additives Regulation” in the Turkish Food Codex. As in eight of the tomato paste samples there have been found sorbic acid presence in the range of 667,66 mg/L and 4,8 mg/L, in 10 of the tomato paste samples there have been found benzoic acid in the range of 1059,98 mg/L and 0,4 mg/L. It is determined that in the five of the tomato paste samples containing sorbic acid, the sorbic acid was found between the limits put by the law because of the production in plastic package, and in the three of the samples sorbic acid was not between the limits because of the production in tin package. In addition, it was determined that ten of the tomato paste samples contain benzoic acid which is not allowed to be in tomato pastes according to the law. Among the analyzed samples, it is found that 20 of the tomato paste samples were produced in comply with Turkish Food Codex Food Additives Regulation on the ground of containing neither benzoic acid nor sorbic acid.
