GIDA SAVUNMA SİSTEMİ ve BU SİSTEMİN HAZIR YEMEK SEKTÖRÜNDE UYGULANMASINA YÖNELİK BİR ÇALIŞMA

Abstract

Gıda sektörünün tüm dünyada giderek önem kazanması, tüketici güvenliğinin sağlanması, sağlıklı beslenme bilincinin artması, gıda güvenliği yönetim sistemleri ile gıdaların hammaddeden başlayıp tüketime kadar geçen her safhasında kontrol altına alınarak izlenebilirliğin sağlanması gibi birçok nedene bağlı olarak uluslararası alanda da firmalar bu gelişime katkı sağlamak için yeni oluşumlar içerisinde yer almışlardır. Yeni oluşumlardan biri haline gelen ve gün geçtikçe önem kazanan gıda savunma dünya genelinde en dikkat çeken konu haline gelmiştir. Gıda Savunma (food defense), gıdanın kasıtlı eylemlerden ya da kontaminasyondan korunması demektir. Zarar vermek isteyen kişinin amacı, insanları öldürmek ya da ekonomik olarak zarar vermek olabilir. Kasıtlı eylemler genellikle mantıklı değildir ve bunları önceden tahmin etmek zordur. Bu nedenle gıda savunma sistemi de bir plan dahilinde yürütülmektedir. Son yıllarda artan global gıda terör olayları gıda tedarik zincirini de yakından inceleme gereğini getirmiştir. İnceleme sonuçları gıda sektörü için tehlike olduğunu göstermekte ve gıda güvenliğinin riske girebileceğini desteklemektedir. Bu kapsamda, kuruluşlar kendi bünyelerinde olabilecek en küçük riskleri de göz önüne alarak risk değerlendirmesi yapmakta ve önlemler almayı hedeflemektedir. Bu çalışmada; gıda savunma, gereklilikler, planlar, gıda güvenliği standartları ile ilişkisi, vakalar ve bir havayolu ikram kuruluşundaki uygulaması hakkında bilgi verilmesi amaçlanmıştır. Son yıllarda daha da ön plana çıkmaya başlayan bu konu hakkında farkındalık oluşturulmaya çalışılmıştır. Bir havayolu ikram kuruluşunda yapılan örneklemede sistem anlayışından hareket ederek bir değerlendirme yapılmıştır. Değerlendirme kapsamında özellikle gıda güvenliği ile ilgili gıda, su ve buz güvenliğine ilişkin alınabilecek güvenlik önlemlerine yer verilmiştir. AIB (Academy of International Business) üzerinden yapılan çalışmada havayolu ikram kuruluşlarının konum ve bağlı olduğu programlar ve gıda güvenliği açısında alınan önlemlerle sistemin olumlu etkilerinin neler olduğu belirlenmiştir.

Due to various reasons such as the increasing importance of the food sector in the whole world, securing consumer safety, increase in the conscience of healthy nutrition, ensuring close inspection of the processing of food substances from raw material to consumer goods with the help of food safety management systems, the companies has found places in the new developments to provide assistance also in international area. Food defence which has become one of the new formations and gaining importance day by day is the most noticeable in the world area. Food Defense is having measures in place to reduce the chances of someone intentionally contaminating the food supply in order to kill or hurt people, disrupt our economy or ruin your business. Food defense system is carried out according to a plan. The global food terror incidents, that increased lately, require to survey the food supply chain closely. The results of these observations show that there is a danger for the food sector and support the idea that food safety can be at risk. Withing this context, by considering even the smallest risks that may occur in their system, organizations aim to do a risk assessment and take preventive measures. Within the frame of this work, based on food defense, information was given on the food defense, requirements, establishment and implementation of the system, plans, the relationship between food safety standards, cases, on site operation of airline catering services. Acting on a system concept, an evaluation has been made in an airline catering organisation. Necessary measures that can be taken about water, ice and food safety are given a place within the concept of the evaluation. The position and the programs which the airline organisations related to, the measures taken about food safety and the positive effects of the system are determined in this study made of the AIB (Academy of International Business).
